All capsicums start off as green capsicums. These are picked off the vine earlier then the others. Capsicums will begin to change into different colours depending on how long they are left on the vines before picking. Green capsicums eventually will change into red capsicums after ripening on the vines long enough. Stacked with vitamin A and C, they are the sweeter capsicum of the family due to the sugar content developing while they are still ripening on the vine.
Available all year round.
For optimum keeping, it is best to place red capsicums in a plastic bag and to store them in the dry crisp area of the refrigerator.
