The colour of a capsicum is indicative of when it was harvested with the stages of ripeness transcending from green, yellow, orange through to red. All are edible however the colours also indicate the levels of sweetness and as red capsicums are the most mature, they are the sweetest and contain the most Vitamin C. Due to their almost fruity sweet flavour, this is the best to eat fresh or pack in kids' lunchboxes.
