Its plum glossy skin hides a pale white firm flesh that gets softer the more you cook it. A staple of Mediterranean cuisine, its origins a from China. They can be soft and creamy or rich and meaty. Its up to you.

Health Benefits - Low in calories and a great source of fibre. They are an excellent alternative to meat. 

Flavour - The smaller the eggplant, the more milder the taste. The larger the eggplant, the more richer and meatier the flavour is. Grill or roast them to bring out its peak flavour. 

Availability - Available all year round with the peak season being summer/sping. 

Storage - Place eggplants in a breathable plastic bag and store them in the dry crisp area of the refrigerator.
