Well known for its roll in Japanese cuisine, Enoki mushrooms are a culivated mushroom consisting of long thin white stalks with white caps. They are especially popular in soups. Enoki mushrooms have a firm texture and a mild, fruity flavour. Look for Enoki mushrooms that are firm and white.
Available all year round depending on weather conditions. They can sometimes be inconsistent.
For optimum keeping, store Enoki mushrooms in a plastic or paper bag and place them in the dry crisp area of the refrigerator.
