Similar to button mushrooms, swiss brown mushrooms are the baby mushroom of the portabello family. They have a bolder and more robust taste which can be eaten raw or cooked. Firmer and more dense the button mushrooms, Swiss Browns have a less moisture content and will hold their shape better when cooked then other mushrooms.
Available all year round.
For optimum keeping, store Swiss Browns in a paper bag and place them in the dry crisp area of the refrigerator.
