A cream coloured, carrot root shaped vegetable, parsnips are a member of the parsley family. They can be eaten raw but are most often used in soups. They are prepared in a variety of ways but are at their sweetest when they are roasted. The are harvested in Autumn and Winter which makes them very popular for soups.
Available all year round. Peak season is winter.
For optimum keeping, store parsnips in a plastic bag and place them in the dry crisp area of the refrigerator.
