Shallots are the immature onion which has been picked before the bulb has started to form. They have white bottoms which connect to green tops and are sold in bunches. In Victoria, shallots are known as spring onions and in other states are known as Eshallots. The bottom white part of the shallot is generally used as it is the more flavoursome part of the vegetable.
Available all year round. Peak season is Winter.
For optimum keeping, place shallots in a plastic bag and store them in the dry crisp area of the refrigerator.
