All capsicums start off as green capsicums. These are picked off the vine earlier then the others. Capsicums will begin to change into different colours depending on how long they are left on the vines before picking. Green Capsicums have a shiny, crisp flesh with a hollow seeded core. They are the more bitter and less sweet capsicum and are slightly harder.
Available all year round.
For optimum keeping, it is best to place green capsicums in a plastic bag and store them in the dry crisp area of the refrigerator.
