A Spelt Fusilli with Tomatoes, Mascarpone & Anchovies

Toss bronze die extruded spelt fusilli through anchovies melted gently in olive oil, garlic, chilli and sweet cherry tomatoes. Stir through mascarpone and a splash of reserved pasta water for a silky, rich finish.

Top with parmesan, toasted pine nuts and fresh parsley.
